Anniversaire Blackberry is a beautifully expressive variation of Burning Sky’s celebrated mixed fermentation beer, taking the elegant base of Anniversaire and enriching it with the depth and complexity of whole blackberries.
Following eleven months in oak barrels, the beer is transferred onto whole blackberries for a further two months, allowing the fruit to slowly infuse without overwhelming the beer’s delicate balance. During this time, the mixed culture continues to evolve, integrating the berry character with subtle acidity, oak tannins and the complex flavours developed by the wild yeast.
The result is a beer that feels remarkably natural and harmonious, where fruit enhances rather than dominates the brewery’s elegant barrel-aged base.
