A vibrant and zesty white blend of Sauvignon Blanc and the adventurous Bulgarian Dimyat, a wine that jumps out of the glass with open arms.
APPELLATION: Thracian Valley, Bulgaria
GRAPES: 70% Sauvignon Blanc & 30 % Dimyat, a local Bulgarian grape variety grown in Southern Bulgaria and the Black sea coast.
VINEYARDS: The grapes are sourced from private growers – the Sauvignon blanc vineyard is 15 year old, North – South facing, and the Dimyat – 6 year old facing East – West. Both vineyards are on carbonated soils with high mineral content.
WINEMAKING: The grapes are handpicked in small trays. Both varieties are vinified separately – fermentation of the pressed juice in small inox vessels with constant temperature control. Ageing on the fine lees for 3 months with battonage two times per week. Final blending, stabilization and bottling in April 2022.
TECHNICAL FACTS: ABV 13%, Total Acidity: 5.44 g/l, Residual Sugars: 1.8 g/l
COLOUR: Pale yellow colour with green hues.
NOSE: Intense nose with fresh herbs and tropical notes.
PALATE: Fresh and juicy in the mouth combining lovely citrus peel, apple blossom, nettle, fresh cut grass and tarragon notes. Tight body and lovely citrusy finish.
FOOD MATCH: As an aperitif or with shellfish, seafood, vegetarian dishes, fresh cheeses.
