Half as long a maceration as usual, this year’s Favonio is brighter toned and in tighter focus than the 2019, a welcome variation on a favourite. A clean, powerful yet delicate orange. The effect of the limestone and skin contact is so evident through the stone fruit flavour, all whilst maintaining it’s crisp, fresh and clean feel. 50 year old vines. Grapes are de-stemmed and placed into 50hl concrete tanks for 4 days. Pressed back to concrete to continue fermentation. After racking, the wine spends 8 months in a mix of 20hl oak and acacia barrels.

Francesco and Pauline are young vignerons from Nizza Monferrato who have finally made their dream come true and created a place where they can grow their own grapes: in the heart of the UNESCO heritage site of Piedmont region. They farm Barbera, Moscato, Cortese and Chardonnay following a holistic approach for a low impact on the ecosystem.
