Biodynamic, Organic, Low Sulfur
After working in various other wineries, John decided to break out on his own in 2015 to make wine to complement his other farming of sheep, honey and olive oil. He has two hectares of 35-year-old Cinsault vines across a few small plots on clay-limestone with alluvial gravel. Farming organically, the work in the vineyard – as in the cellar – is consistent with the recommendations of the biodynamic calendar. After harvest, sheep graze in the vineyard to create a synergy between plant and animal kingdoms.
