A bold and savoury red wine bursting with ripe berry notes, plum and spice such as cloves and cinnamon. There is freshness as well to balance out those bolder flavours. The grapes are de-stemmed and placed in 50 hl cement tanks where they remain for about twenty days during which part of the spontaneous fermentation takes place in contact with the skins, without controlling the temperature. 3-4 re-paints or manual punching down a day are carried out as required. After racking, ageing takes place in 20 hl oak barrels, for about 8 months and then 2 months in bottle.
No clarification and filtration or addition of sulphur.
Young vignerons from Nizza Monferrato have finally made their dream come true and created a place where they can grow their own grapes: in the heart of the UNESCO site of Piedmont region. They farm Barbera, Moscato, Cortese and Chardonnay following a rather holistic approach for a low impact on the eco-system.
